Automatic controlling smoker
This mid-sized automatic smoker, an easy-to-introduce model for local governments or small/medium-sized companies, is the first of its kind in the industry. “Smoken,” an automatic cold/hot smoker, has been selected for the “Promoted Business for Partnership of Agriculture, Commerce & Industry of Tsu City, Mie Prefecture. We also make proposals for planning & development of high-value-added products for revitalization of town by taking advantage of local specialty products.

Support for new business opportunities with the mid-sized automatic smoker, the first of its kind in the industry
Smoken SK1001 is a professional-use mid-sized automatic smoker which can perform cold and hot smoking automatically. Conventional smokers have been either large-sized smokers for large-scale food processing facilities or small-sized smokers for individual use and there have been few models which small and medium-sized businesses can introduce easily. Also, although smoking has been considered to be an attractive processing method for fresh food, it has relied much on hunches and been considered to be difficult to provide stable flavor.
“Smoken” takes advantage of the superior control technology cultivated through our machine tool manufacturing. It is an innovative smoker in which almost all processes can be controlled automatically. Also, it has realized the price and size which small and medium-sized businesses and local governments find it easy to introduce.

We also provide consultation for menu development and product development.

1. Automatic computer control unit secures stable process quality;

3. Smoking recipes can be saved in a program;

A story behind the development of “Smoken”

“Smoken” is a product born from the joint project of Mie University, Daisan Bank and Hikari Kikai Seisakusho for promoting the partnership of agriculture, commerce and industry. Mie prefecture is blessed with fresh and delicious seafood. There was a desire for delivering such bounties of the sea without losing their seasonal flavor to many more people. The development of this product started, based on an idea that smoking process, which allowed food to be stored for a long time and could take advantage of rich flavor of ingredients, might be used to realize such desire, and another idea that the control technology of Hikari might be used to make equipment that could perform difficult smoking process automatically.
Currently, we are also considering development of Mie special smoked products while consulting Mr. Shingo Murabayashi, a teacher of the cooking course of Ohka High School, who became a model for a popular TV drama, “High School Restaurant.”
